Mexican seasoned rice with carrot and onion.

Ingredients

1/3 Butter flavored cooking spray
2/5 cup Fresh chopped onion
2/3 cup Low fat unsalted chicken broth
2/3 cup Rice, brown, whole grain, instant
1/10 cup Shredded carrots
1/10 tsp Ground cumin
1/16 tsp Ground cayenne (red pepper)
1/10 cup Scallions, chopped , thinly sliced
1/3 Medium lemons (for garnish; optional)

Preparation

1 Lightly spray a medium nonstick saucepan with cooking spray.

2 Add onion and sauté over medium heat until the onion wilts, around 4 minutes.

3 Add the broth and bring to a boil.

4 Mix in the rice, carrot, cumin, and cayenne pepper. Cover and remove from heat.

5 Let stand for 5 minutes.

6 Fluff the rice with a fork, stirring in the scallions. If desired, garnish with lemon. Serve immediately

Cook's Notes

Consider adding some extra cayenne pepper to spice up this dish.
