Ingredients

3/4 piece Bacon, cured, pan fried , cooked crisp, chopped
1/16 cup Chopped tomato , small dice
1/16 cup Lettuce, cos, fresh, shredded
1/8 cup Fresh baby spinach (finely chopped)
3/8 tbsp Fat free mayonnaise
1/4 pinch Salt
1/16 tsp Black pepper
1/4 Cucumber, fresh, medium
1/4 pinch Chopped parsley

Preparation

1 Combine bacon, tomato and greens with mayonnaise. Season with pepper; set aside.

2 Peel cucumber. Trim off ends, and slice in half lengthwise. Use a spoon to scoop out seeds; discard. Place cucumber in a glass dish. Divide BLT mixture between segments, mounding in hollowed areas. Sprinkle with minced parsley or green onion, if desired. Slice into 2-inch pieces.

You may make these up to 12 hours ahead of time and chill until serving.
