Ingredients

1/2 lb. Chicken breast
1/2 lb. Spicy sausage (andouille, Italian, chorizo - any)
1 c. White rice
2 Bell peppers (any color)
14 oz. Can tomatoes (stewed, diced, crushed - any)
1/4 tsp. Crushed red pepper flake
2 c. Water
Tiny bit of cooking oil

Preparation

Slice chicken into bite size pieces. Remove casing from sausage and slice into bite size pieces (or 1/4" thick slices). Remove seed pod from bell peppers and slice into 1/4 " strips.

Put large pot on high heat with a tiny bit of cooking oil. Add a pinch of crushed red pepper flake. Heat oil for a few seconds. Add sausage and bell peppers. Stir fry for 1-2 minutes (until you can smell sausage browning).

Add to pot: chicken, rice, water, entire can of tomatoes with liquid. Add another small pinch of red pepper flake if you like it spicy. Bring to a boil. Cover, reduce heat, and simmer until rice is done -- about 18 minutes.

Cook's Notes

This recipe tastes even better when the cooked dish has been sitting in the fridge for a day to let the flavors marinate.
