Slightly more involved recipe than the original - but still easy and very tasty.
1 lb Lean turkey (or pork) sausage
1 Pak southern gravy mix
1 lb Frozen tatter totts
4 Eggs
Cheese slices
Pre heat oven to 400. Brown the sausage. While sausage is cooking, prepare the gravy per package instructions. After draining the sausage, combine gravy and heat to boiling. Pour gravy sausage mix into 9x13 pan. Cover with tatter totts. Bake for 15 mins. With about 5 mins remaining, scramble 4 eggs, leave slightly runny. Remove the pan from the oven and add the eggs evenly over the tatter totts. Add enough slices of cheese to cover the top. Bake for another 10 mins or until cheese is melted.
We loved the original so much that we decided to altar it for a breakfast dish. I think we may like this even better. We're "breakfast for dinner" type people!
