Ingredients
1 tbsp Rice vinegar
1 tbsp Vegetable oil
2 tbsp Low sodium soy sauce
1 tsp Crushed garlic
2 tbsp Fresh chopped onion
1 tsp Sesame oil
2 tbsp Water
2 tbsp Brown sugar
1/2 tsp Sesame seeds (optional)
3/4 lb Boneless skinless chicken breasts , cut into 3 inch strips
18 Fresh mushrooms (med) , stems removed
Preparation
1 Spray a baking sheet with nonstick cooking spray and set aside. Preheat broiler.
2 In a bowl, mix the first 8 ingredients plus the sesame seeds (if using), add chicken strips and marinate for 20 minutes, turning occasionally.
3 Wrap marinated chicken around one mushroom, secure with a toothpick, and place on baking sheet.
4 Broil until chicken is cooked throughout, about 5 minutes.
