Easy to make and great for pot lucks or luncheons.
1-10 oz Box frozen spinach, thawed and squeezed dry
2 Eggs slightly beaten
1 cup Cottage cheese
4 oz Cream cheese, brought to room temperature
1/2 lb. Grated jack cheese
2 tbs Grated parmesan cheese
Preheat oven to 350 degrees.
Mix first 5 ingredients well and pour into a buttered 6 inch souffle dish.
Bake for 1/2 hour, sprinkle with parmesan cheese.
Continue baking 1/2 hour longer.
Can be doubled for a larger group.
