Gingered Beef and Vegetables
Ingredients
1.5 lbs. Boneless beef round steak, cut into 1-inch cubes
1/2 c. Scallions, sliced
4 Medium carrots (1/2 inch slices)
2 Garlic cloves, minced
1.5 c. Water
2 tbs Soy sauce
2 tsp. Grated fresh ginger
1.5 tsp Instant beef bouillon granules
1/4 tsp. Crushed red pepper
3 tbs Cornstarch
3 tbs Cold water
1/2 c. Chopped red bell pepper
2 c. Frozen sugar snap peas, thawed
Cooked rice
Preparation
In crock pot combine beef, carrots, scallions. and garlic. In medium bowl, combine 1.5 c. water, soy sauce, ginger, bouillon, and crushed red pepper; pour over mixture in cooker.
Cover; cook on low-heat setting for 9-10 hours or on high for 4-5 hours.
In small bowl, combine cornstarch and 3 TBS cold water; stir into meat mixture along with bell pepper. Cover; cook 20-30 minutes more, or until thickened, stirring once. Stir in sugar snap peas. Serve with rice.
