Peanut Butter Sesame Pork Chops

Super quick and low-carb entree. Great on the grill!

Ingredients

2 - Thick cut pork chops (butterflied)
1/3 cup - Peanut butter (no sugar added type)
1/2 cup - Sesame dressing (Annie's Shitake Sesame Dressing works well)
1 - Scallion, sliced thin
2 tbsp - Fresh cilantro, chopped
1/2 - Hot red pepper, chopped

Preparation

1. If time is available, marinate pork chops and vegetables in dressing for 2 hrs in the refrigerator. Remove pork chops from marinade and set aside.

2. Mix all ingredients together in small bowl.

3. Brush on top of pork chops.

4. Grill. Baste twice during grilling with remaining sauce.

5. Allow chops to rest for 5 min. before serving.
