Ingredients

1 Cooking spray
2 Eggs
1/2 cup Fat free milk
1/2 tsp Vanilla extract
1/8 tsp Ground cinnamon
4 piece Bread, French, small slice , 1 inch thick
2/3 cup Banana, fresh, slices , thinly
1 tbsp Powdered sugar , sifted or light pancake and waffle syrup product, or maple syrup

Preparation

1 Preheat the oven to 350 degrees F, and then line a baking sheet with foil and lightly coat foil with cooking spray.

2 In a shallow bowl combine eggs, milk, vanilla, and cinnamon. Beat with a wire whisk rotary beater until well mixed. Set aside.

3 Using a knife, cut a pocket in each bread slice, cutting horizontally from the top crust almost to, but not through, the bottom crust. Fill bread pockets with thinly sliced banana.

4 Dip bread slice into mixture, coating both sides of each slice, and place on the prepared baking sheet.

5 Bake for 10 to 12 minutes or until golden brown, turning once.

6 If desired, sprinkle with powdered sugar or serve with syrup.
