Ingredients
2 tbsp Vegetable oil
3 Ribs of celery
2 Carrots
1 Onion
3 Garlic
1/2 tsp Salt and mint
1/4 tsp Ground turmeric
1 can Whole tomatoes
1/3 cup Green lentils
1 tbsp Tomato paste
1/2 Mini shell pasta
1 can Bean medley, drained and rinsed
2 tbsp Chopped fresh parsley
Preparation
in a large dutch oven,heat oil over medium heat; cook celery, carrots, onion, garlic, salt, mint, and turmeric, stirring occasionally, until softened, about 6 minutes.
Stir in tomatoes, breading up with back of spoon; stir in lentils, tomatoes paste and 4 1/2 cups water. Bring to boil; reduce heat, cover and simmer until lentils are tender, about 25 minutes. Meanwhile, in large pot of boiling salted water, cover and cook pasta until al dente, about 8 minutes. Drain and add to soup along with beans ans parsley; cook for 5 minutes.
