Ingredients

3 Large baking potatoes, such as russets

1 tbsp Canola oil

Cooking spray

Salt to taste

Preparation

Preheat oven to 450 F.

Cut the potatoes lengthwise into 10 to 12 even-sized wedges. Place them in a large bowl and toss with the oil.

Spray a baking sheet with cooking spray and place the potatoes on the tray in a single layer. Bake for 20 minutes. Use a metal spatula to scrape the wedges from the pan and turn them over with a fork or tongs, keeping them in a single layer. Bake for 15 minutes longer, or until golden and crisp. Season with salt to taste.
