Bacon-Egg-Cheese Casserole
Ingredients
6 slices Bacon, cut into strips
12 oz Bag frozen hash browns
1 Onion chopped
3 Eggs
3 Egg whites
3/4 cup Ricotta cheese
2/3 cup Shredded swiss cheese
3 tbsp Grated parmesan cheese
3 tbsp Flour
1/2 t Baking powder
1/4 t Salt
1/4 t Pepper
Preparation
Preheat oven to 375
prep casserole dish (6 cup, or 2 smaller)
cook bacon in a skillet until crisp (4 minutes) add potatoes and onion, cook stirring about 6 minutes, remove form heat, let cool slightly
Beat eggs and whites
Add ricotta and rest of ingredients.
Stir in the potato mixture and pour into casseroles
Top with more cheese
Bake 20 - 45 minutes (depending on dish)
