Cashew Chicken Stir-Fry

Make ahead stir fry

Ingredients

6 lbs Boneless, skinless chicken (about 12 breasts)

3/4 cup Soy sauce

1/3 cup Red cooking wine

1 tbsp Fish sauce

3 tsp Garlic, minced

2 1/4 tsp Ginger, minced

1 1/2 tsp Crushed red pepper flakes

3 cups Cashews, unsalted

1/2 lb Assorted stir fry vegetables

2 tsp Sesame oil

6 one Gallon freezer bags

3 Sandwich bags

Preparation

1. Cut chicken into bite size pieces

2. Divide chicken evenly into 3 one gallon freezer bags

3. Mix soy sauce, wine and fish sauce in medium bowl. Divide evenly into 3 bags.

4. Place 1 tsp garlic, 3/4 tsp ginger, and 1/2 tsp red pepper in each chicken bag. And seal bags.

5. Put 1 cup cashews into each sandwich bag

Place chicken and cashew bag into 1 gallon bag.

Serving Day:

1. Thaw entree

2. Heat sesame oil in large skillet. Stir-fry chicken and sauce over med-high heat until chicken is cooked through (20-25 min). Remove chicken from pan.

3. Add vegetables and stir-fry until crisp (about 5 min)

4. Add chicken to vegetables, mix in cashews and serve

Serve with rice
