Preparation
1. Boil, steam or microwave potatoes until tender.
2. To make topping, combine ricotta and tasty cheeses, chives and black pepper to taste in a bowl.
3. Cut a cross in the top of each potato and press to open out.
4. Divide topping between potatoes and place under a preheaed grill for 4-5 minutes, or until cheese melts and filling is warm.
