Ingredients
8 Potatoes, scrubbed
CHEESE AND CHIVE TOPPING
3/4 cup (185g) Ricotta Cheese, reduced fat
4 tbs Tasty Cheese, reduced fat, grated
2 tbs Fresh Chives, snipped
Black Pepper, freshly ground
Preparation
1. Boil, steam or microwave potatoes until tender.
2. To make topping, combine ricotta and tasty cheeses, chives and black pepper to taste in a bowl.
3. Cut a cross in the top of each potato and press to open out.
4. Divide topping between potatoes and place under a preheaed grill for 4-5 minutes, or until cheese melts and filling is warm.
