beef, blackbean and cashew stirfry

Quick, easy and delicious stirfry

Ingredients

200g Fresh rice noodles

1 t Vegetable oil

1 t Sesame oil

300g Sirloin steak, cut into strips

4 Green onions

1 t Black bean sauce

1 t Lemon juice

1/4 cup Beef stock

1 1/2 cups Baby spinach leaves

2 t Roasted cashew nuts

Preparation

Place the noodles in a bowl, cover with boiling water and gently separate with a fork. Drain and set aside.

Heat a wok or large frying pan over high heat. Add the oil, sesame oil and steak and cook for 2 minutes or until golden. Remove and set aside. Add the green onions, black bean sauce, lemon juice and stock ot teh wok and cook for 1-2 minutes or until slightly thickened. Return the steak to the wok, add the spinach and cook for 1 minute or until the spinach is wilted. Sprinkle with the cashews and serve with the noodles.
