Candied Pecans with Sesame

Ingredients

Vegetable oil spray

1 lb Shelled raw pecan or walnut halves

5 cups Water, divided

1 cup Sugar

1/2 cup Honey

1/4 tsp Salt

1/4 cup Toasted sesame seeds

Preparation

Preheat oven to 275 degreesF/140 C

Lightly spray oil onto a large cookie sheet and set aside.

If using walnuts, bring 4 cups of water to boil, add walnuts and blanch for 2 minutes. Remove from heat, drain well, pat very dry and set aside. (not necessary for pecans)

In a large skillet, combine remaining 1 cup water, sugar, honey and salt and bring to a boil. Continue to cook until syrupy. Reduce heat to medium and add nuts. Stir and boil for about 2 minutes, making sure the nuts are well coated.

Drain coated nuts in a colander to remove excess syrup. Transfer nuts onto oiled cookie sheet, separate and spread evenly. Place in preheated oven and bake for about 30 minutes or until golden brown. Stir and turn nuts occasionally to ensure even cooking.

Remove from oven and cool slightly. While the nuts are stil warm and tacky, toss in large bowl with the sesame seeds to coat. Spread out on cookie sheet again to cool and harden thoroughly. Serve alone or with other dishes, or in a glass gar with tight lid for snacks.

Serves 20.
