Asian Cucumber Salad

Ingredients

2 tbsp Brown sugar

1/2 cup Rice vinegar

2 tbsp Reduced-sodium soy sauce

1/4 tsp Red pepper flakes

2 tbsp Reduced-sodium veg broth

2 tbsp Minced green onions

6 Medium cucumbers, peeled, halved lenghtwise, seeded, and thinly sliced

2 tsp Finely chopped roasted peanuts

Preparation

1. In a small bowl, mix the brown sugar, rice vinegar, soy sauce, red pepper flakes, and vegetable broth.

2.In another bowl, combine the onions, cucumbers, and peanuts. Pour the dressing over. Mix well. Serve immediately or refrigerate.
