Ingredients
1 cup Fresh mozzarella OR feta cheese, cubed
½ cucumber, seeded (optional) and diced
1 Large ripe tomato, diced
¼ cup Red onion, diced
1 Avocado, diced
3-4 tbsp Olive oil
Dash of salt
Preparation
1. Toss the cheese with the various vegetables
2. Drizzle with olive oil, sprinkle with salt, and serve immediately
Cook's Notes
If you're not going to eat the salad right away, combine everything except the avocado. You can add that at the last minute to keep it from getting mushy and turning brown.
