Ingredients

1 lb Red snapper
1/2 t Black pepper
1/2 t Salt-free all-purpose seasoning, Spike or Mrs. Dash
1/2 c Almonds, ground fine (any nut or seed can be used)
2 tablespoons Olive oil

Preparation

Preheat oven to 350*F.

Rinse the fish fillets and pat dry. Apply seasoning and pepper to both sides of fish. Grind the almonds to a fine powder in a food processor, running the machine in short bursts (do not overgrind or nuts will become oily).

Put 1 tablespoon oil in glass baking dish and add fish. Sprinkle fish with almond meal and bake for 15-20 minutes or until fish flakes easily with a fork. Serve with fresh lemon or lime.
