This is the classic dressing used for any salads (leaf, tomato,) in France

Ingredients
1 Part Dijon Mustard
2 Parts Red Wine Vinegar
3 Parts Olive Oil
Preparation
1. Put the Dijon Mustard (best if you get a nice one!) into a bowl.
2. Add Red Wine Vinegar and stir with a fork or wooden spoon until the consistency of the Mustard breaks down. You can do this by "feel", but it's usually about twice as much.
3. Add in Olive Oil & continue stirring.
4. Use to flavour any salads - tastes great in tomatoes & onion salads, bean salads, leaf salads.
