green vegetable and tofu curry

good curry, but much better the second day...

Ingredients

1 tbs Vegetable oil

1-2 tbs Green curry paste

2 cups Coconut cream

300g Pumpkin cut into large pieces

200g Chinese long beans or green beans

100g Baby corn

100g Shiitake mushrooms

2 Tomatoes cut into wedges

250g Firm tofu cubed

1 tbs Thai fish sauce

1 tbs Brown sugar

Preparation

Heat oil in wok

add curry paste, and fry with 1/4 cup water till water boils and curry is fragrant

add coconut cream, pumpkin, beans, corn, mushrooms, tomatoe, tofu and fish sauce and sugar,

bring to boil and simmer till veges are soft
