My Version of my mom's recipe ;o)

Ingredients

2 cups Pre-cooked Brown Rice (cooked in chicken broth)
3 - 4 Boneless Chicken Tenders (cubed)
1/4 cup Chopped Onions
1/4 cup Cubed Carrots
Chopped Cilantro
2 Chicken Broth Cubes
Salt & Pepper To Taste
Paprika to taste
Olive Oil/Butter
*Optional ingredients:
Chopped Green Onions
Sweet Peas
Sweet Corn

Preparation

1). Cook chopped onions and carrots on oil/butter until tender. About 2 to 4 minutes.

2). Add chicken broth cubes, chopped cilantro and cubed chicken.

3). Add paprika, salt and pepper. MIX. Allow chicken to brown and fully cook. About 3 to 5 minutes.

4). Add optional ingredients if any.

5). Add pre-cooked brown rice; MIX. Allow flavors to marry. About 2 minutes.

6). Taste and make taste corrections if needed.
