Tuna Steaks with Tarragon Sour Cream

Rich tuna blends nicely with the bold and creamy tarragon-lime sauce.

Ingredients

SAUCE

1/3 cup Fat-free or reduced fat sour cream

2 tbl Fat-free or reduced fat mayonnaise

2 tsp Fresh lime juice

3/4 tsp Dried tarragon, crumbled

1/2 tsp Pepper

1/4 tsp Salt

TUNA STEAKS

1/4 tsp Paprika

1/8 tsp Garlic powder

1/8 tsp Salt

4 Tuna steaks (about 4 ounces each)

Vegetable oil spray

1 Medium lime, quartered

Preparation

In a small bowl, stir together the sauce ingredients.

In another small bowl, combine the paprika, garlic powder, and 1/8 tsp salt. Sprinkle over both sides of the tuna.

Heat a large nonstick skillet over medium-high heat. Remove from the heat and lighly spray with vegetable oil spray (being careful not to spray near a gas flame). Cook the tuna for 2 minutes on each side, or until very pink in the center, for rare. Be careful not to overcook.

To serve, transfer the tuna to plates. Drizzle with the sauce. Place the lime wedges on the side.
