Chicken Fried Rice

Ingredients

1 cup Rice

14 Fl ozs chicken broth

1/2 lb Boneless skinless chicken, sliced

2 tbs Vegetable oil

3 Green onions, chopped

1 Carrot, julienned

1 Egg, beaten

3 tbs Soy sauce

Preparation

Cook rice in broth, then spread out on a cookie sheet to cool. Heat oil in a hot wok over high heat. Add chicken, green onions, and carrot. Stir-gry 3 minutes or until carrot is tender-crisp. Add egg and cook, sitrring gently, until firm. Sir in the rice and cook until heated. Add soy sauce and stir until well blended.
