Molletes

Molletes are a simple, but delicious breakfast or late night snack common in Mexico.

Ingredients

2 Rolls

Black or pinto beans

Butter

Mozzarella cheese

Pico de gallo

Preparation

Preheat oven to 400 degrees.

For the bread, you can use a baguette, bolillos, or English muffins. Slice them in half and lay on a baking pan with cut sides up.

Optionally, spread each side with just a little butter.

Spread each side with some of the beans. You can use canned, refried beans if you want, but it's best if you make the beans yourself. I normally make molletes with the leftovers after I've made beans for a meal. You can also rinse a can of pinto or black beans and mash them or make them smooth in a blender or food processor. They don't need to be smooth, but should be spreadable.

Top the beans with the cheese. I find that one stick of string cheese per slice works well. You can also use shredded mozzarella or slices if that is easier for you. Monterey jack is also ok to use. I like to use a low fat cheese.

Bake about 10 minutes until the cheese is melted.

Top with pico de gallo.
