Chinese Chicken Salad

Ingredients

SALAD:

1 Head cabbage, shredded (or one bag of cole slaw cabbage mix)

1 bunch Green onions, thinly sliced

2 c Cooked chicken breasts, sliced into strips

1/2 c Toasted sunflower seeds

4 tsp Sesame seeds

1/2 c Toasted sliced almonds

2 Pkgs Ramen noodles, UNcooked and broken up (or dry chow mein noodles)

DRESSING:

1/3 c Vegetable oil

2 tbsp Sesame oil*

1/3 c Sugar

2 tsp Soy sauce (or 1/2 tsp salt)

3 tbsp Balsamic vinegar*

1/2 tsp Pepper

Flavor packets from Ramen noodles (if using dry chow mein noodles, substitute 1 Tbsp chicken bouillon here)

Preparation

Mix salad ingredients together. Mix dressing ingredients together. Toss dressing with salad.

Cook's Notes

Adjust all measurements to your family's taste. You can use any combination of nuts and seeds that you have. You can even try adding craisins (dried and sweetened cranberries - spectacular!). Any combination of seeds, nuts or dried fruit that you have should total about 1 C or more. Mix with veggies, chicken and Ramen noodles. *Sesame oil and balsamic vinegar are the KEY ingredients to this tangy salad.
