1/2 cup Coconut milk
1 tbsp. San J Tamari
1 t Fresh grated ginger
2 cloves Garlic, minced
1 t Fresh lemongrass
1 tsp Lemon juice
1 tbsp Honey
1 tbsp. Coconut oil
2 Small, thin, salmon filets
1 cup Cooked basmati rice
Preparation
Heat over medium heat coconut oil, add
ginger for a minute, then garlic for a minute. Just brown salmon on each side, pour coconut milk over, add tamari, lemon juice, lemon grass, and honey. Turn heat to a simmer, and simmer about 20 minutes until cooked through. Serve over basmati rice, with sauce.
