Preparation
Put potato and broth in crockpot.
Leave crockpot on high until potatoes are almost cooked.
Add cauliflower, turn to low, let cook for a few hours longer.
Saute onion, garlic, and carrot, then add to pot.
Let cook on low for a bit longer.
When everything's soft, puree the soup.
Salt and pepper as necessary.
Saute mushrooms in olive oil and herbs.
Add to pureed soup.
