Just made this up. I couldn't think of what to do for dinner and hadn't been to the grocery store yet so I grabbed what I had in the fridge and presto! Out of the oven came this quick and easy yet tasty as well as healthy dish! If you like spinach tomato and feta pizza but don't want the extra fat, you will LOVE this!

1 tbsp + 3 tbsp butter, margarine or low-fat butter substitute
2 cloves Fresh garlic, minced
1/2 White onion, chopped
4 cups Fresh spinach
1 Large ripe tomato, chopped into 1/4" cubes and divided
1/2 cup Non-fat plain yogurt
1 lb Ground beef, cooked (optional)
1/2 cup Crumbled feta cheese, divided
Parsley, salt and pepper to taste
Tortilla chips, yeast rolls or toasted bread slices
Preparation
Preheat a large saucepan over medium-high heat. Add 1 tbsp butter. Melt the butter and coat the bottom of the pan. Add garlic and onions. Saute until garlic is lightly browned and onions are tender-crisp. Add spinach and cook until just wilted.
Preheat oven to 375.
In a large mixing bowl, combine ground beef and yogurt. Toss to coat beef. Add spinach mixture, half of the tomato and half of the feta cheese. Toss all ingredients until blended.
Use remaining 3 tbsp butter to grease a 8 1/2" x 12" glass casserole dish. Chop any leftover butter and set aside. Spread spinach mixture into pan. Top with remaining butter pieces, tomato and feta.
Bake for 30 minutes until bubbly and feta turns light golden brown.
Serve warm with tortilla chips, yeast rolls or toasted bread.
Cook's Notes
The ground beef in this recipe can be omitted for a vegetarian meal.
