Ingredients

2 cups Fat-free buttermilk pancake mix
1 1/2 cups Apple juice
2 tsp Cinnamon
Syrup, jelly, or preserves (opt'l)

Preparation

Prepare pancake mix according to pkg directions, substituting apple juice for water. Stir in cinnamon and mix well. Spray lg nonst. skillet with cooking spray and heat over med-high heat. Pour about 1/4 cup batter per pancake onto skillet and cook 2-3 mins per side until golden brown. Serve with syrup, jelly or preserves, if desired.
