Easy to make vegetable. Make sure you cut the stems off, or else it will be very bitter.

Ingredients

1 bunch Broccoli di rabe (aka broccoli rabe or rapini)
Water
1 Tbspn Olive Oil
2-3 Garlic cloves, crushed and chopped
Salt
Pepper

Preparation

1. Wash the broccoli di rabe and place on a cutting board. Cut off ALL of the stems. The bitterness of broccoli di rabe is in the stems, so get it all. It'll be a lot.

2. Fill a 3 quart pot 3/4 full with water. Add salt. Bring water to a boil.

3. Add the Broccoli di rabe and boil for 12 more minutes.

4. Drain the water and put broccoli di rabe to the side.

5. In a skillet, heat olive oil over medium heat for a minute. Saute the garlic for a few more minutes.

6. Add the Broccoli di rabe to the skillet. Add salt and pepper, to taste. Saute with oil and garlic. (You may also add crushed red pepper or ginger, be creative!)

7. Remove from heat and serve.
