Quick and easy vegetarian version of a classic.

Ingredients
10 Enchilada size tortillas
2 cans Vegetarian refried beans
1 can Red enchilada sauce
1 bag Colby jack cheese
Sour cream
Non stick spray
Preparation
Pre heat oven to 375.
Spray a 9x12 pan with non stick spray.
Pour a couple Tablespoons of sauce in bottom of pan.
Place a couple spoonfulls of refried beans on tortilla.
Sprinkle with cheese and tightly roll the tortilla up and place in pan.
Repeat with the remaining tortillas.
Pour the rest of the enchilada sauce over the enchiladas, use a spoon to cover all the tortillas as much as you can with the sauce.
Bake for about 20 min until heated through and the edges are browning.
Sprinkle cheese over the top and bake for another 5 min or until the cheese is melted.
Serve topped with sour cream and your favorite hot sauce.
Cook's Notes
Sometimes for an added kick I add taco seadoning to the beans before I put them in the tortillas.
