Bruschetta Italiano

Ingredients

1/8 cup Extra Virgin Olive Oil

1/2 tsp. Minced garlic

1 Baguette (or French bread), cut into 12 slices

3 Large ripe tomatoes, peeled, seeded and diced

1 cup Chopped fresh oregano

12 oz. Low-fat mozzarella cheese, shredded

Salt and pepper

Preparation

In a small bowl, combine olive oil and garlic. Brush one side of each bread slice with oil mixture. Place bread slices, oil side up, on a cookie sheet and set aside.

In large bowl, combine tomatoes, oregano, and salt and pepper to taste.

In 425 F oven, lightly toast bread slices. Remove from the oven and top with tomato mixture and cheese.

Return to oven and broil until cheese melts.

Cook's Notes

Bottled Italian Dressing makes a flavorful substitute for the garlic and EVOO (sorry I had a Rachael Ray moment...haha). I also like to sprinkle a little Parmesan cheese on top after baking.
