Ingredients
3 cans Hormel vegetarian chili
3 cans Diced tomatoes
2 cans Black beans (rinsed)
1 package Chili or taco seasoning
1 bag Frozen sweet white corn
1 can Chopped jalapenos
1 White onion diced and browned
1tsp. Olive oil
1 bag Shredded cheese
1 bag Fritos or tortilla chips
Preparation
Be Careful! This is very tricky:)
Cut up onion (I usually just buy the fresh onion that is already chopped) and begin browning in frying pan coated in olive oil.
Open cans of chili, tomatoes, black beans and jalapenos and pour into pot on medium/high heat.
Add seasoning
Add corn
Add onions
Heat through and serve topped with cheese alone or on top of Fritos.
Cook's Notes
You can make this recipe as large or small as you want and it is a matter of taste with what you add the tomatoes will make it runnier the more you add. I use vegetarian chili because it does not use lard and it does use tofu for added protein. I also like to use the canned tomatoes with green peppers for chili. You can add chili pepper if you like it a little spicier.
