Preparation
1. Preheat oven to 400 degrees. Grease muffin tin.
2. Mix dry ingredients. Beat egg, milk and oil together separately. Make a well in the center of dry ingredients and pour wet ingredients into it. Fold ingredients swiftly with a rubber spatula just until all dry ingredients are moistened. Batter should be lumpy and moist.
3. Spoon batter into muffin tins, filling each 2/3 full, handling batter as little as possible. Bake 20 to 30 minutes. Let cool 5 minutes. Serve warm.
