Ingredients
6 c. Peeled, cored, and sliced apples (about 6 apples)
1 t. Ground cinnamon
Juice of 1/2 lemon
2/3 c. Brown sugar or to taste
5 t. Cold, unsalted butter, cut into bits, plus butter for greasing the pan
1/2 c. Rolled oats
1/2 c. All-purpose flour
1/4 c. Shredded, unsweetened coconut (optional)
Dash of salt
Preparation
1. Preheat oven to 400 degrees. Toss apples with 1/2 of the cinnamon, the lemon juice and 1 T. sugar and spread in a lightly buttered 8' square or 9' round pan.
2. Combine all other ingredients-including remaining cinnamon and sugar-in container of a food processor and pulse a few times, then process a few seconds more until everything is well-incorporated but not uniform.
3. Spread topping over apples and bake 30 to 40 minutes, until topping is browned and apples are tender. Serve hot, warm or at room temperature.
