Ingredients

2 Tbls Salsa, thick and chunky
1/3 c Water
1 Bell pepper, finely diced
1 can (16 oz) Diced tomatoes, not drained
3/4 c Quick cooking brown rice, uncooked
1/4 tsp Dried thyme
1/4 tsp Salt
1/8 tsp Black pepper
1 can (15 oz) black beans, drained and rinsed
8 Flour tortillas (7 1/2" diameter)
Light sour cream (optional)
Salsa, thick and chunky (optional)

Preparation

Spray a large skillet with non-stick cooking spray. Add salsa, water, bell pepper, tomatoes, rice, and seasonings. Bring to a boil. Reduce heat to low. Cover and simmer 15 minutes. Stir in drained beans. Continue to cook on low, covered, for 10 minutes or until most of the liquid is absorbed, stirring occasionally.

Serve 1/2 cup filling in each warmed tortilla. Top with optional light sour cream and/or salsa before folding.
