Glaze:
1/3 cup Margarine
1/3 cup White sugar
1/3 cup Packed brown sugar
1/3 cup Water
1 tsp Corn starch
Enchiladas:
4 Small granny smith apples
1 tbs Flour
1 cup White sugar, separated
8oz Cream cheese
1 tbs Vanilla extract
1 tsp Ground nutmeg
2 tbs Ground cinnamon
1/4 cup Chopped pecans
6 (8 inch) flour tortillas
Preparation
Preparing the glaze:
1. Bring margarine, sugars, corn starch and water to a boil in a medium sauce pan.
2. Reduce heat and simmer, stirring constantly for 3 minutes.
Preparing enchiladas:
1. Preheat oven to 350 degrees F.
2. Core and chop apples into 1/2" cubes.
3. Mix apples cubes with 1/2 cup sugar and 1 Tbs flour. Set aside.
4. Stir cream cheese and 1/2 cup sugar together until smooth (whip with a spoon).
5. Add vanilla and nutmeg to cream cheese mixture and stir together.
6. Spread cream cheese frosting on one side of a tortilla and spoon apples into tortilla.
7. Fold tortilla and place seam side down in a lightly greased 8x8 baking pan.
8. Repeat until all tortillas are set in baking pan.
9. Spoon any remaining apples over enchiladas.
10. Pour glaze over enchiladas.
11. Sprinkle cinnamon and pecans over enchiladas.
12. Bake 40 minutes, until tortillas are crunchy and starting to brown on top.
13. Makes 6 large enchiladas; may be cut in half to serve 12.
Cook's Notes
Chop apples, then prepare glaze. Let glaze sit while enchiladas are stuffed and arranged. If tortillas are too crispy, you can cover the enchiladas for the first 20 minutes of cooking.
Serve warm with a scoop of vanilla ice cream.
