Ingredients
1 tbsp Olive oil
1 c Diced celery
1 cup Diced onion
1 cup Diced green pepper
11/2 tsp. Cumin
1 tsp Oregano
1 tsp Chili powder
1 tsp Pepper
1 tsp Garlic
2 cups Chicken broth
1 1/2 cup Water
3 cans No salt added black beans
1 can Diced tomatoes with jalepenos
Preparation
Heat 1 tbsp olive oil over medium heat. Add celery, onion and green pepper to oil. Cook 10 minutes. Add all spices. Cook 3 more minutes. Dump all into a pan with chicken broth and water. Add beans and diced tomatoes. Bring to a boil. Reduce heat and simmer 30 minutes.
