A new take on the traditional Cornish Pasty. Stuffed with eggs, bacon, potatoes and cheese.

Ingredients

For the Pastry
3 cups Flour
3/4 stick Chilled butter
6 tablespoons Cold water
For the Filling
2 Medium potatoes
4 Rashers of bacon
2 Eggs
4 tablespoons Grated cheddar cheese

Preparation

1. In a large bowl, combine flour, butter and salt. Blend ingredients until well combined and add water, one tablespoon at a time to form a dough.

2. Toss mixture until it forms a ball. Kneed dough lightly against a smooth surface with heel of the hand to distribute fat evenly. Form into a ball, dust with flour, wrap in wax paper and chill for 30 minutes.

3. Whilst the dough chills chop bacon and potatoes into small pieces and fry until the potatoes are soft and golden. Add eggs and stir quickly until they are cooked through.

4. Split dough into four pieces. Roll each piece into a flat circle about the size of a side plate.

5. Put 1/4 of the egg mixture onto each of the pastry circles. Moisten the edges with water and fold in half to make semi-circles.

6. Use a fork to press down the edges decoratively. Make two small slits in the top for steam and place on a buttered baking sheet.

7. Bake at 350 for 1 hour.

8. Place under a damp cloth and cool for 15 minutes.
