Ingredients

1 19 oz. Can red kidney beans, rinsed and drained
2 cups Cooked brown rice
3/4 cup Salsa
1/4 cup Minced parsley
3/4 cup Shredded nonfat cheddar cheese

Preparation

preheat oven to 350 deg.

In a medium bowl, combine the beans, rice salsa and parsley; transfer to a 2 quart casserole. Sprinkle with the cheese and bake, uncovered, until the mixture is heated through and the cheese is melted, about 20 minutes.

I cut 1 Chicken Breast into small pieces, grilled it, and threw it into the mix. I served it with some fat-free sour cream and the family loved it!
