Preparation
Spread each tortilla evenly with the beans. Top 2 of the tortillas evenly with the tomato, green onions and cheese. Place the remaining 2 tortillas, bean-side down, on top of them; press gently to help them stick together.
Spray a non-stick skillet with nonstick cooking spray. Cook the quesadillas until lightly browned; about 3 minutes on each side. Cut each quesadilla into quarters. Serve with the salsa and sour cream.
