Preparation
Coat large skillet with cooking spray and heat to medium high. Add diced ham and sautee about 3 minutes. Add frozen peas and carrots. Add pepper, garlic, and soy sauce to taste. Sautee about 5 more minutes or until vegetables are hot. Push ham and vegetables to one side of skillet. Add scrambled eggs and cook until done. Stir entire mixture together. Add cooked rice and mroe seasonings to taste.
