Cheesy Baked Haddock in Egg Sauce

Ingredients

1 Med onion chopped
2 tbsps Butter or margarine
2 tbsps Flour
2 Eggs
2 cups Milk
Haddock fillets
Crackers
Cheese
Salt and pepper

Preparation

fry chopped onion with butter/margarine for approx 5 min on med-high heat. add flour and stir until you have a paste. add milk and stir. reduce heat to low.

in a separate pot, hard boil 2 eggs (approx 7 min boiling time). peel eggs and cut into bit size pieces. add to the milk mixture. put haddock in a large casserole dish ( i ususally put it in frozen) and pour milk and egg mixture over the top. add salt and pepper. cover with cracker crumbs. bake at 350 degrees F for approx 30 minutes. top with cheddar cheese the last 10 min of cooking.
