Cowboy Quiche

Easy to make and so delicious, this pseudo quiche is great for a fun "breakfast for dinner" or as an addition to potluck brunches.

Ingredients

18 Eggs
1/4-1/2 cup Milk
10 oz. Hot salsa
1 package Frozen potato rounds or tater tots, thawed
Grated cheddar cheese to taste

Preparation

In large bowl combine eggs and milk. Whisk until all yolks are broken and well blended.

Add salsa to eggs and whisk.

In your largest glass baking dish, (larger than 9x13, if you have it) empty potatoes and line pan.

Pour egg mixture over potatoes and bake at 350' for 35 minutes.

Cover entire dish with cheese and return to oven until cheese is melted and bubbly, about 10 minutes.

Cook's Notes

Even if you're sensitive to spicy foods, go ahead and use the hot salsa anyway as the eggs and cheese really mellow it to a small kick, not a mouth burning wow!

So easy to make. I reduced the portions some so it would work in a regular 9x13 casserole dish and it still took longer than 35 minutes to bake (closer to 1 hour). And definitely use HOT salsa. We ended up topping the quiche with more salsa for added flavor. 3 boys under 5 gobbled this right up as well!!

This was delicious. The only issue I had was that it took way more than the 35 minutes it says to cook it. I ended up cooking it for at least 1 hour. Maybe if I used a bigger pan & it was spread thinner. Make sure it is cooked enough before you add the cheese or it becomes a bit chewy. Once it was done, it was great! We had it for dinner but it would be great for breakfast or brunch.

This was awesome! I used mild salsa because I am such a wimp, but the cook was right - medium or hot would still be fine for me because the eggs, potatoes, and cheese really does tone it down. And very easy to make!
