Meal Type: Entree
Ingredients
1 pound Bacon
1 pound Pasta (elbow, shells, or penne)
4 ounces Parmesan (or more)
1 Onion, diced (optional)
1/3 cup Butter
Salt & pepper as needed
Preparation
1. Boil pasta as directed on box
2. Cook bacon in a large frying pan. Be sure not to over-cook the bacon, leave it a bit chewy if possible.
3. Remove bacon from pan, breaking and crumbling it into bite-sized (or smaller) pieces.
4. Remove about half of the bacon grease from pan; discard. Leave other half. Add butter and heat pan over medium-low heat.
5. Add onion to pan and cook until lightly browned.
6. Add cooked pasta to pan, stirring frequently for about 5 minutes, or until browned to your liking. (I like it extra crispy, about 10 minutes).
7. Add bacon, salt and pepper to mixture, stir. Top with Parmesan and reduce heat to low. Leave uncovered until cheese is melted. Serve when ready!
Cook's Notes
My Grandma always served this at Thanksgiving and Christmas as a side but I usually serve it as a main course for my family.
