Cabbage Soup

Ingredients

1 Large head cabbage (3 lbs), quartered, cored & sliced

Salt to taste

6 cups Water

2 lbs Lean beef short ribs or chuck with bone

1 Medium onion chopped

2 cans Tomato sauce (8 oz each)

3 tbsp Fresh lemon juice

1 tsp Brown sugar

Preparation

Place cabbage in large bowl and sprinkle with salt. Set aside for 1 hour. Drain cabbage and place in large pot. Add water, beef and onion. Heat to boiling. Reduce heat, cover and simmer 2 hours. Stir in remaining ingredients and 1 tsp salt. Simmer 20 minutes more.
