Ingredients
4 Skinless, boneless chicken breast halves - cut into bite-size pieces
2 tablespoons Chili powder, divided
Salt and pepper to taste
2 tablespoons Olive oil
2 cups Chopped green bell pepper
1 cup Chopped onion
4 Jalapeno peppers, seeded and minced
2 Large tomato, cut into chunks
20 Drops hot pepper sauce
Preparation
Season chicken with 1 tablespoon chili powder, salt and pepper. Heat oil in a large skillet over medium high heat and saute seasoned chicken for 3 to 4 minutes, or until no longer pink. Remove from skillet with a slotted spoon and keep warm.
In same skillet, stir fry bell pepper and onion until soft. Add jalapeno peppers, tomatoes, remaining 1 tablespoon chili powder and hot pepper sauce. Cook, stirring, for an additional 3 to 5 minutes; add chicken and stir fry for 2 minutes more.

MY CHANGES:
Red pepper strips instead of green pepper (Paul doesn't like green). Next time, I'll probably go 2 red pepper to one green. I used two huge reds this time.
I put in two whole onions, sliced rather than chopped, because we love them.
I added two cloves of garlic, chopped.
I used only two jalapenos, chopped. People who can stand more heat could add one or two more. It was spicy, but not mouth-burning. Except for when I forgot that I hadn't washed my hands yet and stuck my finger in my mouth after deseeding them. That was hot.
And I skipped the tomatoes and the hot sauce.
