1 1/2 teaspoon Red curry paste
1/2 teaspoon Salt
1/4 teaspoon Ground black pepper
6 Skiless, boneless chicken breast halves (about 2 pounds)
1 tablespoon Cooking oli
1=2 cup Unsweetened coconut milk
1 10.75 ounce Can condensed cream of potato soup
1 9-10 ounce Package frozen mixed vegetables
1/4 cup Coconut, toasted (optional)

instead of adding the cream of potato soup..just add more coconut milk...also use red curry in a jar AND curry power.. you can also put tomato paste in it as well as spinach for extra veggie.
