Ingredients

1/2 tbs Olive Oil
2 Packed cups baby spinach
Pepper
5 Eggs
4-6 oz Salmon, cooked and flaked
1/4 cup Feta cheese, crumbled
1 tsp Dill

Preparation

Heat olive oil in skillet, Cook spinach and cook 3-4 min. Season with salt and pepper and remove from heat.

Whisk eggs, salmon, cheese, dill and cooked spinach.

Preheat boiler.

Pour mixture back into skilllet, flatten evenly and cook over medium heat. Lift up the cooked egg around edges, and tilt skillet to allow uncooked egg to flow underneath. Cooke until bottom turn golden brown and the egg is nearly set, about 8 mins.

Place skillet under broiler.

Broil 1-2 mins.
